Enrique Olvera’s Criollo at the center of our Oaxaca Spanish Immersion

Did we mention that we’ll be hosting the Fluenz Spanish Immersion in Oaxaca this April? Yes, and it’s going to be something to remember, especially because our six-day curated experience includes one of Oaxaca’s most important stops: Criollo, chef Enrique Olvera’s restaurant. 

Following on our long-term collaboration with Mexico City’s Pujol, we’ve made Criollo the centerpiece of our Oaxaca Spanish Immersion experience. On Wednesday night, we’ll be treated to a theatrical experience with Cocina de Humo, a several-hour sensory spectacle created just for us. We truly believe the language of food is just as important as Spanish itself if you want to communicate anywhere in Latin America and Spain. Thus, Oaxaca must be the beginning of any food journey in Mexico.
